Perfect Postpartum Pancakes


Sometimes meals come out intentionally delicious, other times it's by accident.

That's what happened with these pancakes and the experiment turned out to be a fan favorite!

Our postpartum clients love the simple breakfast idea, especially after bringing a newborn baby home.

Simple and tasty is the idea!

Ingredients you'll need:

  • Pancakes of your choice {from scratch, box, frozen, the choice is all yours!}

  • Nutmeg & Vanilla {optional}

  • Plain Greek Yogurt

  • Peanut Butter

  • Walnuts

Directions:

First you want to make your pancakes however you prefer them! You might like them thick and fluffy or thin and crispy. I prefer the thin and crispy around the edge myself, but I adjust a few things for those who would choose more fluff.

Either way you like them you can make this meal using pancake mix from scratch or a box! I like to add a little nutmeg and sometimes a splash of vanilla extract to the mix.

For an even quicker meal you can buy the frozen pancakes and throw them in the oven or toaster for a quick warm up. Of course you could also make a few batches from scratch and freeze them!

While the pancakes are cooking I get the Greek yogurt and teaspoon of peanut butter and stir the two together real quick.

Next, when the pancakes are ready, I stack them on the plate and let them cool for a few minutes. Once cool, I spread the Greek yogurt and peanut butter combo on top of them.

And just like that, you're done!

Sprinkle a little cinnamon, add your walnuts, grab your fork and go to town.

For a variety of toppings you can try:

raspberries

blueberries

sliced or slivered almonds

red pepper jelly (YES!)

good old fashioned syrup

cooked strawberries

There are so many options and variations to dress up the same old, same old pancake and make it more fun.
